This green burger is clean & crisp and the patty is gluten free & vegan!  The edamame patty has edamame, green peas, garlic, mint & sea salt. It is so fresh, I nosh on patty bits by themselves! It doesn’t need condiments or a carb, but of course I enjoyed it as a brioche slider with butter lettuce, heirloom tomatoes & some chèvre.

 

Yield: 8-10 slider patties

Ingredients:

2 cups frozen shelled edamame

1 cup frozen green peas

1 garlic clove

8-10 fresh mint leaves

1 cup rolled oats

Salt to taste (1-2 tsp)

 

Directions:

1. Bring 4 cups of water to a boil in a pot and add some salt, edamame and green peas. Let it boil for 5 min, turn off the stove, drain the beans & peas and run some cold water through them.

2. While the beans & peas are cooking, crush the oats to a flour in a food processor and transfer to a mixing bowl.

3. Next, crush the beans, peas & garlic in the food processor and add to the oat flour. Add salt to taste and gently mix the ingredients by hand until they are incorporated and patties can be formed.

4. Refrigerate for 30 minutes or so, form patties and cook on medium low for 5 min on each side in a saucepan coated with cooking oil. Cook longer based on preference. Serve warm by themselves, in a salad, slider or over quinoa!
