This smoky and spicy hummus is finger lickin’ good! While a classic hummus will always be one of my favorite things ever, I changed it up a bit by adding some sweet caramelized carrots and spicy smoky harissa. Yum!

 

Yeilds: 2 Cups

Ingredients:

2 cups cooked garbanzo beans

2 garlic cloves

1/4 cup tahini paste

2 tbsp lemon juice

1/4 cup extra virgin olive oil (adjust based on consistency)

1/4 cup water

2 tbsp harissa paste

1 cup carrots, cut into sticks

1 tsp salt (adjust based on taste)

1 tbsp butter or olive oil for cooking

 

Directions:

1. In pan over low heat, melt the butter/oil and add the carrot sticks to it in a single layer. Let them cook on low for around 10-12 minutes on each side until they begin to caramelize.

2. Blend all the ingredients, including the carrots, and serve with warm pita, crudites or use as a spread on sandwiches or wraps.
